SURFACE TEMPERATURE MATTERS

Did you know that the wonderful flavor from browning meats and vegetables (the Maillard reaction) only happens when your pan is between 280 and 330°F (140 to 165°C)? Above that, proteins start to get burnt and bitter flavors and sugars start to carmelize. Below that, you just sweat out water without adding any flavor.

Hotter isn't always better. If your pan is too hot, you are just adding bitter/burnt flavors as you cook. With Cooksy thermal cameras, you can cook a steak or other meats where your pan is between 300 and 350 degrees, maximizing the browning and flavor development from the Maillard reaction.

TAKING GUIDED COOKING TO THE NEXT LEVEL

Paired with pan temperature information from the thermal camera, the Cooksy app will guide you step-by-step to cook hundreds of amazing recipes. It will tell you when your pan is too hot or too cold, and it will tell you when to add, stir and flip your ingredients.
